Feel like sweet snacking, but feeling guilty? No more! These are healthy AND vegan chocolate bars, a wholesome take on a classic candy-bar favorite. A soft, naturally sweet base made from almond and coconut flour is layered with a rich, creamy peanut–almond butter filling, all sweetened with maple syrup and infused with vanilla. Finished with a smooth chocolate coating and a sprinkle of flaky sea salt, they’re indulgent yet balanced, perfect for satisfying sweet cravings in a more nourishing way.
Healthy Gooey Chocolate Bars
Ingredients
110g almond flour
40g coconut flour
70g coconut oil, melted
2 tbsp maple syrup
1 tsp vanilla extract
½ tsp sea salt
200g creamy peanut butter
2 tbsp almond butter
60ml maple syrup
55g coconut oil, melted
1 tsp vanilla extract
340g chocolate chips
1 tbsp coconut oil
Method
Preheat the oven to 180°C and line a square baking dish with parchment paper.
In a big bowl, combine the almond and coconut flour, then add the coconut oil, maple syrup, vanilla extract and salt. Mix well, and press out evenly into the baking dish. Bake for 10 minutes. Let it cool.
In a small bowl, mix the peanut butter with the almond butter, maple syrup, coconut oil and vanilla. Transfer the mixture to a pot and bring to a boil on medium heat. Keep stirring while boiling it for 2 minutes. Then pour over the cooled off biscuit layer. Freeze for at least 30 minutes.
Melt the chocolate chips together with the coconut oil. Let cool for 10 mins. In the mean time take out the frozen filling. Cut into bar sized pieces. Dip into the chocolate and let it drip over a grate or a grill plate. Sprinkle with flakey salt.
