Easy Almond Cake


Ingredients


  • 4 large eggs

  • 100g white sugar

  • 1 tbsp lemon zest

  • a few drops of vanilla extract

  • 170g almond flour

  • 1 tsp baking powder

  • a pinch of salt

  • 30g sliced almonds

  • powdered sugar for decoration


Method


  1. Preheat to 180°C and grease a round baking pan of 20cm diameter.

  2. Crack the eggs in a medium sized mixing bowl and start mixing them at medium to high speed. Add the sugar, and mix until airbubbles start to form. Then add the lemon zest and vanilla extract.

  3. Fold in the almond flour, baking powder and salt by hand with a spatula. Dont overmix.

  4. Pour the batter into the greased cake pan, sprinkle the sliced almonds on top and put it in the oven and bake for about 25-30 minutes. When a toothpick comes out clean, the cake is ready.

  5. Let it cool down in the cakepan for 10 minutes, then take it out and move it to a cooling rack. Sprinkle some powdered sugar over top if desired. ENJOY!
